Tóm tắt


Nghiên cứu được thực hiện nhằm đánh giá khả năng ứng dụng thịt củ ấu trong quy trình chế biến bánh mì sandwich. Thịt củ ấu được sử dụng để thay thế bột mì trong công thức phối trộn với các tỷ lệ thịt củ ấu:bột mì khác nhau, bao gồm 0:100; 30:70, 40:60, 50:50 và 60:40. Các đặc tính vật lý như cấu trúc (độ cứng, độ đàn hồi), màu sắc (L*, a*,b*); hóa lý (độ ẩm, aw) và giá trị cảm quan (màu sắc, mùi, vị và cấu trúc) của sản phẩm được đánh giá. Kết quả cho thấy ở tỷ lệ thịt củ ấu:bột mì 50:50, sản phẩm được cải thiện độ cứng (168,29 ± 12,62 và 1066,92 ± 38,92 g lực đối với ruột và vỏ sản phẩm, tương ứng) và độ đàn hồi (0,95 ± 0,0056 và 0,9138 ± 0,0020 đối với ruột và vỏ sản phẩm, tương ứng), vỏ (L* = 60,16 ± 0,56, a* = 7,67 ± 0,46 và b* = 30,69 ± 1,56) và ruột bánh mì (L* = 68,38 ± 0,31, a* = 2,08 ± 0,06 và b* = 16,26 ± 1,23) có màu sắc đặc trưng của thịt củ ấu với hoạt độ nước (0,96 ± 0,0005) và độ ẩm (32,78 ± 1,33%) thích hợp. Bên cạnh đó, sản phẩm ở tỷ lệ này cũng được đánh giá cảm quan cao về màu sắc, trạng thái, mùi và vị (4,60 ± 0,70; 4,80 ± 0,42; 4,60 ± 0,70 và 4,60 ± 0,70 điểm, tương ứng).
