Abstract


This study aims to isolate and select lactic acid bacteria from ‘kimchi’ fermented food that had the ability to inhibit the fungus Colletotrichum spp. causing anthracnose disease in ‘Cat Hoa Loc’ mangoes after harvest. As a result, 6 strains of lactic acid bacteria were isolated from ‘kimchi’ samples from Vinh Long market. The study used the dual-culture overlay method and the double transplanting method to investigate the antagonistic activity of bacteria. The results showed that there were 3 strains LKC1, LKC2, and LKC3 indicating antagonistic activity against Colletotrichum spp. Bacterial strain LKC1 exhibited the highest antagonistic activity against Colletotrichum spp. with 60.41% at day 2 by the dual-culture overlay method and 64.86% at day 3 by the double transplanting method. The LKC1 strain was 100% similar to that of Lactobacillus plantarum based on morphological observations and gene sequencing.
