Abstract


 

Food is one of the components that form ethnic cultural identity. It is inevitable to mention cá sỉnh - Onychostoma laticeps, a kind of fish, as a prominent kind of food in Thai people's cuisine tradition. Onychostoma laticeps is processed by White Thai people into a variety unique and strange dishes used to offer Divine Spirit and ancestors on festival occasions of the year; To treat distinguished guests and visitors from long distance. The dishes from Onychostoma laticeps are a symbol of prosperity, happiness and luck. Therefore, they contribute to the typical culinary culture of White Thai people in Yen Bai province in particular and Thai people in the northwestern region in general.
