STUDY ON NUTRITIONAL COMPOSITIONS OF CASTANEA MOLLISSIMA IN CAO BANG

Abstract


Chestnuts (Castanea mollissima) are rich in nutritional components and highly beneficial to human health. In Vietnam, Cao Bang chestnuts  are particularly renowned. In this study, the ash content, moisture content, mineral elements, and crude protein were evaluated using AOAC standard methods. The total polyphenol content was determined using a colorimetric method, employing the Folin-Ciocalteu reagent, to identify the nutritional value of Cao Bang chestnut. The moisture and ash contents of Cao Bang chestnut were found to be 48.81 ± 0.26% and 7.81 ± 0.01%, respectively. The contents of Mn, K and Ca were 7.06 ± 0.13 mg/100g, 125.60 ± 0.79 mg/100g and 277.72 ± 0.28 mg/100g, respectively. The crude protein content was measured at 7.85 ± 0.32%, and the total polyphenol content reached 149.66 ± 2.82 mg gallic acid equivalents (GAE)/g chestnuts. These findings indicate that Cao Bang chestnuts possess high nutritional value and can serve as a good source of protein and essential minerals human nutrition.
