PHYSICOCHEMICAL CHARACTERISTICS AND BIOACTIVE COMPOUNDS OF RED DRAGON FRUIT (Hylocereus polyrhizus) DURING TEMPORALY STORAGE

Red-flesh dragon fruit (Hylocereus polyrhizus) is rich in bioactive compounds and is often used in food processing or as a fresh food. Understanding the fluctuation of physicochemical properties and biologically active substances during the temporary storage of red flesh dragon fruits is of great significance for cordonating activities of consumption and processing. In this study, red flesh dragon fruits type of 1 and type of 2 were harvested in Tra Vinh province and temporarily stored to assess the change of some physicochemical properties and biologically active substances for 10 days. The research results showed that, during the temporary storage period, the red flesh dragon fruit changes the physical properties and concentration of biologically active substances. The pH, concentration of dry matter increased little, while the content of malic acid, fruit peel hardness, vitamin C, and polyphenols decreased gradually. During the 10-day storage period, only betacyanin was shown to be insignificantly reduced. According to research, red flesh dragon fruit can be stored for 6-8 days before processing or eating fresh.
